7 Day Simple + Healthy Meal Plan

Here’s a 7 day simple + healthy meal plan that will keep your diet on point + doesn’t require much time in the kitchen!

You can even scrap your weekend meal prep as your work week lunches couldn’t be any easier to whip up right on the spot. And if you work outside your home – simply pack a “lunch grocery bag” for the week, leave it in the office fridge and you’re set! In fact, this is exactly how I’m handling my own work lunches this week.

My work week “lunch grocery bag” will include a loaf of Silver Hills Bakery Little Big Bread, a package of Applegate Smoked Deli Turkey, a package of Sargento Ultra Thin Cheddar, a bag of mini cucumbers, a package of hummus single serve cups + a bag of cuties.

THE MEAL PLAN

Sunday

Monday

  • Breakfast – leftover egg bake + fruit
  • Lunch – turkey & cheddar toasted sandwich, cucumbers & hummus + 2 cuties
  • Dinner – instant pot BBQ chicken, roasted potatoes + coleslaw

Tuesday

  • Breakfast – oatmeal with peanut butter & natural jelly, turkey bacon + berries
  • Lunch – turkey & cheddar toasted sandwich, cucumbers & hummus + 2 cuties
  • Dinner – leftovers

Wednesday

  • Breakfast – oatmeal with peanut butter & natural jelly, turkey bacon + berries
  • Lunch – turkey & cheddar toasted sandwich, cucumbers & hummus + 2 cuties
  • Dinner – banana oatmeal pancakes, sausage links + fruit
