Sheet pan meals are all the rage and for good reason; one pan, simple prep, easy cleanup, and a healthy kid friendly meal option. This sheet pan chicken recipe is a classic that can be easily spiced up or changed by simply switching up the seasoning. Meals like this are a total staple around our house. In fact, Monday nights are known as sheet pan dinner night – because – you guessed it, I plan on one to get our week started almost every week. They offer a balanced and healthy meal without stress and they really make our Mondays (or any day that I put one together) go just that much smoother. And this week it was this basic Sheet Pan Chicken, Potato, and Green Bean meal.

Simple sheet pan dinners like this one hit on all the things I look for when planning out our weekly meals! They are simple to put together – for the most part don’t even require a recipe – make a totally balanced meal (protein, healthy carbohydrates + a vegetable) and when you cover your sheet pan with tin foil – you have absolutely no clean up!! Just crumple up that foil and toss it!

This Sheet Pan Chicken, Potato and Green Bean meal takes all of 10 minutes to prep up and is on the table in no time. It’s a classic meat and potato dinner that makes the whole family happy, kids included.
To make this easy meal simply chop up a whole bag or about 1 pound of fresh green beans, 8 to 10 small red potatoes, and 3-4 chicken breasts. Toss them all on your sheet pan (covered in foil of course for easy clean up) and drizzle with olive oil, a splash of distilled white vinegar and a few tablespoons of whatever seasoning blend sounds good at the time. This week it was the Northwoods blend from Penzeys for us – Delicious! Bake it all at 425° for around 40 minutes or until the potatoes are soft and the chicken is cooked through.

Now – want to make your meal time even smoother??…..this sheet pan dinner can be prepped up the night before! The white vinegar will keep the potatoes from browning and the seasonings will have that much more time to flavor up your food. I always prep up my sheet pan meals in advance. My hubby beats me home from work most night so all he has to do on sheet pan night when he gets home is pop it in the oven and dinner is ready when we are! Its awesome!.

Sheet Pan Chicken, Potato, and Green Beans

- 3-4 chicken breasts
- 8-10 small red potatoes
- 1 lb fresh green beans
- 1-2 tbsp olive oil
- 1 tbsp distilled white vinegar
- 2-3 tbsp an all purpose seasoning blend
pre-heat oven to 425.
chop green beans, potatoes, and chicken breasts.
place all ingredients on a sheet pan and drizzle with olive oil, white vinegar, and seasoning blend. Toss until evenly coated.
bake for about 40 minutes or until chicken is cooked through and potatoes are soft
