This savory Broccoli & Sausage Egg Bake comes together with only 6 ingredients and very minimal prep time. And, save yourself even more kitchen time by buying the broccoli already cut up! Nothing wrong with accepting a little help! And if someone else wants to wash and cut the broccoli – I say heck ya! I’ll pay for that!

1. It can be made solely as a meal prep dish for quick reheat breakfasts (or lunches) for your week – just think – 6 servings of prepped meals for very little effort and it even gives you a serving of veggie for breakfast! Gotta love that!
2. It can be made in advance and put in the fridge for when you’re ready to eat. Great when hosting company or just knowing you can sleep in a little and still nail a delicious breakfast. I take full advantage of this option when egg bake is on the menu for dinner. I will whip it up the night before and stick it in the fridge. Then whoever makes it home from work first (me or the hubs), it doesn’t matter, cause its ready to pop in the oven.
OK, so let’s start making this thing!!
Start by cooking the sausage in a large skillet. I like to use an “All Natural” (organic if possible) ground turkey or pork sausage. Basically the words “All Natural” will tell you its free of MSG and sodium nitrate – we don’t need that stuff!! After the sausage cooks down for a few minutes add the broccoli and continue cooking until the sausage is cooked through and the broccoli is just tender and bright green.
Now!! Its time to assemble! Spread the hash browns evenly across the bottom of a greased 9 x 13 inch baking dish.
Mr. Dell’s O’Brien style is where it’s at in the hash browns department! Not only is the ingredient list super clean (nothing wierd), but the added onions and peppers are SO good!
Next sprinkle a few handfuls of shredded cheese + the broccoli & sausage mixture over the hash browns.
Then whisk together the milk and eggs and pour over the dish to cover evenly and season with salt and plenty of fresh cracked pepper. That’s it! Done!! Now you can either cover and refrigerate for later or bake it!

Broccoli & Sausage Egg Bake
Ingredients

12 cage free organic eggs

3/4 cup milk

3 cups O’Brien style hash browns (Mr. Dells “All Natural” is my favorite)

1 cup shredded cheese

1/2 lb of an “All Natural” ground turkey or pork sausage

2-3 cups broccoli (cut)

salt and pepper to taste
Directions:
Begin by cooking the sausage in a large skillet, after a few minutes add the cut broccoli to the sausage and continue to cook until the sausage is cooked through and the broccoli is just tender and bright green.
Grease a 9 x 13 inch baking dish and arrange the hash browns evenly across the bottom. Sprinkle with cheese and the sausage and broccoli mixture.
Then whisk together the eggs and milk and pour over the entire dish to evenly cover. Season with salt and pepper.
Make ahead tip: At this point you can cover and refrigerate (several hours or overnight).
When ready to bake, preheat oven to 350º and bake uncovered 45 – 60 minutes or until set.
