If you asked me which recipe I have shared the most over the years, hands down, it would be these Chocolate Peanut Butter Energy Balls. In fact, one year I even packaged up the dry ingredients in cute clear plastic baggies, attached a little recipe card and gave them away to my personal training clients as a Christmas present! They are just one of those tasty treats you would never expect to be healthy. Call them the cookie dough of the health and fitness community!
They are simple, easy to make, and made with healthy whole food ingredients like oats, milled flax seed, and unsweetened coconut. A treat you don’t have to feel guilty about eating.
And because I’m always looking for ways to make my life easier, I also prep up a few mason jars full of the dry ingredients for quick future “ball” making. (Like I did for the Christmas presents!) Just dump, add the peanut butter and honey, mix, and roll!
Story time: Several years back, my husband’s family began a “Cookie Day” tradition during the holiday season. On Cookie Day we all get together, bake Christmas cookies, and exchange our creations before leaving. That first year everyone showed up with a cookie scoop…..except for me……my Mom used to use 2 spoons to drop her cookie dough……I had never seen one of these before. Well, as you might be able to guess, this guy right here was sitting under the tree for me that year and has served as my “ball” making tool ever since! Love this thing!
Make up a batch of these Chocolate Peanut Butter Energy Balls on the weekends to have on hand for quick snacks throughout the week. They are one of those recipes my family requests and I am always happy to make. A total kid pleaser and an easy healthy option to add to lunch boxes, have ready to go for an after school snack, or send along to evening activities and sports.
A perfect pair to your morning coffee too!!
